Zucchini Fries:
- 2 large zucchini, sliced into matchsticks
Egg Mixture:
- 2 large eggs, whisked
Crumb Mixture:
- 2 cups panko bread crumbs
- 1/2 cup finely grated parmesan cheese
- 1 teaspoon salt
- 1 teaspoon pepper
Instructions
- Preheat the Oven: Preheat the oven to 200C/400F. Line a baking sheet with parchment paper.
- Prepare Zucchini: Slice zucchini into matchsticks.
- Mix Ingredients: Whisk eggs in a bowl. In another bowl, combine breadcrumbs, parmesan, salt, and pepper.
- Coat Zucchini: Dip zucchini in egg, then coat with crumb mixture. Place on baking sheet.
- Bake: Bake for 22-25 minutes, turning occasionally, until crispy.
- Serve: Remove from oven and serve hot.
Notes
- Leftover fries can be stored in the fridge for up to 5 days.
