  • 2 large zucchini, sliced into matchsticks

  • 1 teaspoon pepper

Instructions

  1. Preheat the Oven: Preheat the oven to 200C/400F. Line a baking sheet with parchment paper.
  2. Prepare Zucchini: Slice zucchini into matchsticks.
  3. Mix Ingredients: Whisk eggs in a bowl. In another bowl, combine breadcrumbs, parmesan, salt, and pepper.
  4. Coat Zucchini: Dip zucchini in egg, then coat with crumb mixture. Place on baking sheet.
  5. Bake: Bake for 22-25 minutes, turning occasionally, until crispy.
  6. Serve: Remove from oven and serve hot.
