FOR THE BLISTERED TOMATOES
- 2 1/2 cups cherry tomatoes
- 5 cloves garlic, minced
- 2 tbsp olive oil
- 1 tbsp honey
- 1 tsp salt
- 1 tsp pepper
- pinch of cumin
- 2 sprigs fresh thyme
FOR THE WHIPPED FETA
- 8 oz light cream cheese (full-fat cream cheese works too)
- 200 grams light feta
- 1/4 cup water
- 2 1/2 tbsp honey
- 1 tsp pepper
- 1/2 tsp salt
- 1/2 lemon, zested
Instructions
- Preheat the oven: Preheat your oven to 450°F (230°C).
- Prepare the tomatoes: In an oven-safe dish, combine the cherry tomatoes, garlic, olive oil, honey, salt, pepper, cumin, and fresh thyme. Roast in the oven for 20 minutes until blistered.
- Make the whipped feta: In a food processor, blend cream cheese, feta, water, honey, pepper, salt, and lemon zest until smooth.
- Assemble: Spread the whipped feta on a serving plate, top with blistered tomatoes and their juices. Serve with crostini or crackers.
