Instructions
- Cook the Rice: In a saucepan, bring 2.5 cups of the vegetable stock to a boil. Season with salt and ground black pepper to taste. Once boiling, add the raw basmati rice, cover the pan, and cook for 8 minutes until the rice has absorbed the liquid and is tender.
- Sauté the Vegetables and Sausage: While the rice cooks, heat the extra virgin olive oil in a large pot over medium heat. Add the finely diced onion, celery, green bell peppers, minced garlic, and chopped sage. Season with a dash of salt and ground black pepper. Sauté for about 5 minutes until the vegetables soften but do not brown. Add the vegan sausage bits to the pot and sauté for an additional 2 minutes, mixing well.
- Add Seasonings and Combine: Stir in the smoked paprika and liquid aminos, ensuring the sausage and vegetables are evenly coated. Then fold in the cooked rice, pour in the remaining 0.5 cup of vegetable stock, and add the Cajun seasoning. Mix everything thoroughly and adjust salt and pepper to taste.
- Garnish and Serve: Finally, stir in the chopped parsley to add freshness and color. Serve the vegan dirty rice hot as a main dish or side.
