Jackfruit Mixture
- 2 14.5-ounce cans jackfruit (in brine)
- 1 cup your favorite BBQ sauce (plus more if needed)
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon salt

Instructions
- Drain the jackfruit. Remove the jackfruit from the cans and drain off the brine completely. Set the jackfruit aside to prepare for cooking.
- Heat the jackfruit. Place a large non-stick pan over medium heat and add a splash of oil if your pan isn’t non-stick. Add the drained jackfruit and cook for 5 to 8 minutes, stirring occasionally to warm it through.
- Mash the jackfruit. Using a potato masher or the back of a fork, mash the jackfruit until it resembles pulled pork texture. Remove any seeds or seed casings you can, though it’s okay if some remain as they are safe to eat.
- Season and add BBQ sauce. Sprinkle the paprika, garlic powder, and salt over the mashed jackfruit. Stir well to evenly distribute the spices. Pour in the BBQ sauce and mix thoroughly. Cook for an additional 1 to 2 minutes, stirring frequently to let the flavors combine.
- Assemble the sandwiches. Spoon the BBQ jackfruit mixture onto hamburger buns. Top each sandwich with a generous helping of vegan coleslaw. Serve immediately and enjoy your plant-based BBQ delight!
