- 3 tablespoons all-purpose flour or gluten-free flour mix* (23g)
- ½ teaspoon baking powder (2.4g)
- Pinch of sea salt (0.33g)
- Pinch of ground cinnamon (0.12g)
Optional Add-ins
- 1 tablespoon chopped nuts and/or chocolate chips (14g)
Instructions
- Mix Wet Ingredients: In a mug, combine the mashed banana, oil, almond milk, and sugar. Whisk thoroughly for about 30 seconds until the mixture is smooth and the banana is fully mashed.
- Add Dry Ingredients: Add the flour, baking powder, sea salt, and cinnamon to the mug. Stir well for approximately 20 seconds to ensure all ingredients are incorporated, making sure to get the batter from the bottom of the mug.
- Incorporate Optional Add-ins: Fold in any optional nuts or chocolate chips if using, sprinkling some on top if desired.
- Microwave Cooking: Place the mug in the microwave and cook for about 80 to 120 seconds. Adjust time based on your microwave wattage; 80 seconds worked with 1100W and 100 seconds with 900W. It’s okay if slightly undercooked, as it will continue to set while cooling.
- Cooling: Remove from microwave and let cool for about 3 minutes before enjoying.
- Oven Alternative: Preheat oven to 350°F (175°C). Transfer batter to a 3.5-inch oven-safe ramekin and bake for 25 to 30 minutes. Allow to cool for about 5 minutes before serving. Optionally, sprinkle coarse sea salt on top.
