  • 16 oz full-fat ricotta cheese
  • 1 egg
  • 1/2 tsp salt
  • 1/4 tsp pepper

Sausage and Sauce:

  • 1 tablespoon cooking oil
  • 3/4 lb Italian pork sausage, casings removed
  • 1/2 onion, chopped
  • 34 cloves garlic, minced
  • 24 oz marinara sauce
  • 1/2 cup water or broth
  • Salt and pepper to taste

Tortellini Layer:

  • 1620 oz refrigerated tortellini
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Ricotta Mixture: In a bowl, combine ricotta, egg, salt, and pepper. Set aside.
  2. Sausage and Sauce: Cook sausage in oil until halfway done. Add onion and cook until softened. Stir in garlic. Add marinara sauce, water, salt, and pepper. Simmer.
  3. Assembly: Turn off heat. Stir in tortellini. Top with ricotta mixture and Parmesan cheese.
