Egg Mixture
- 4 large eggs, separated
- 1/2 teaspoon cream of tartar
Cream Cheese Mixture
- 2 ounces low-fat cream cheese
- 1 teaspoon Italian herb seasoning
- 1/2 teaspoon sea salt
- 1/4 - 1/2 teaspoon garlic powder
Instructions
- Preheat Oven: Preheat the oven to 300 degrees F. If you have a convection oven, set it to convect mode. Line two large baking sheets with parchment paper to prepare for baking.
- Beat Egg Whites: Separate the egg whites and yolks. Place the egg whites in a stand mixer with the whip attachment, add the cream of tartar, and beat on high speed until firm meringue peaks form. Once whipped, transfer the meringue to a separate bowl.
- Prepare Cream Cheese Mixture: Place the cream cheese in the now empty mixing bowl and beat on high to soften. Add the egg yolks one at a time, blending thoroughly. Scrape down the bowl and continue to beat until the mixture is completely smooth. Then blend in the Italian seasoning, sea salt, and garlic powder evenly.
- Fold Mixtures Together: Gently fold the firm meringue into the egg yolk and cream cheese mixture. Be careful to fold lightly to avoid deflating the meringue; maintain a firm and airy foam consistency.
- Shape and Bake: Spoon 1/4 cup portions of the foam onto the prepared baking sheets. Spread each portion into an even 4-inch diameter circle about 3/4 inch high, leaving space between each. Bake for 15-18 minutes in a convection oven or up to 30 minutes in a conventional oven, until the outside is golden and firm and the centers do not jiggle.
- Cool and Serve: Allow the cloud breads to cool on the baking sheets for several minutes before transferring and serving. They can be used immediately as a bread substitute or snack.
Notes
- The Best Cloud Bread can be stored in an airtight container in the refrigerator for several days, but the texture is best enjoyed within 12 hours of baking.
- Start with 1/4 teaspoon garlic powder if sensitive to garlic flavor, and adjust up to 1/2 teaspoon according to personal taste.
