For the Chicken:
- 1 1/2 lbs boneless skinless chicken thighs
- 2 tbsp olive oil
- 2 tbsp lime juice
- 3 tbsp Chicken Taco Seasoning (see note below)
For the Tacos:
- 1 cup chopped romaine lettuce
- 1/2 red onion, sliced
- 1 jalapeño, sliced
- 1/4 cup chopped fresh cilantro
- Cilantro Lime Crema
- 8 small corn or flour tortillas
- Lime wedges for serving
Instructions
- Marinate the Chicken: In a large bowl, whisk together olive oil, lime juice, and taco seasoning. Add chicken thighs, toss to coat, and marinate for 30 minutes.
- Grill the Chicken: Preheat grill to medium-high heat. Grill chicken for 4-6 minutes per side until cooked through.
- Rest and Prepare: Let the chicken rest before slicing. Warm tortillas.
- Assemble Tacos: Place chicken strips on tortillas, top with lettuce, red onion, jalapeño, cilantro, and crema. Serve with lime wedges.
Notes
- For the Chicken Taco Seasoning: Combine 1 tbsp chili powder, 1 tsp cumin, 1 tsp paprika, 1 tsp garlic powder, 1 tsp onion powder, ½ tsp oregano, ½ tsp salt, and ¼ tsp black pepper.
