Salad:

  • 4 cups arugula
  • 2 peaches, pitted and sliced
  • 1 shallot, sliced
  • 1/4 cup basil, chopped
  • 8 oz burrata
  • 1/3 cup pecans, chopped

Dressing:

  • 1 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 1/2 tbsp honey
  • 1/2 tsp kosher salt
  • Fresh cracked pepper, to taste

Instructions

  1. Rinse and prepare ingredients: Rinse the arugula and wash the peaches. Pit and slice the peaches and set aside. Chop the fresh basil, slice the shallots, and add them to a small bowl.
