  • 1 cup (130g) all-purpose flour
  • 1/2 tsp kosher salt
  • 3 tbsp jimmies sprinkles

Cheesecake Filling

  • 4 8oz blocks full fat cream cheese, room temperature
  • 1 cup (200g) granulated sugar
  • 2 tbsp all-purpose flour
  • 1 tsp vanilla extract
  • 1/4 tsp almond extract (optional)
  • 3/4 cup (185g) sour cream, room temperature
  • 4 large eggs, room temperature

Sour Cream Frosting

  • 6 tbsp unsalted butter, room temperature
  • 1/3 cup (80g) sour cream
  • 1 1/2 cups (165g) powdered sugar
  • 1 tsp vanilla extract
  • Sprinkles, for topping


Instructions

  1. Prepare Shortbread Crust: Preheat your oven to 350°F (175°C). In a mixing bowl, combine 1 1/4 cup flour, powdered sugar, and a pinch of kosher salt. Cut in the cold, cubed butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs. Add 2 tablespoons milk and mix until a dough forms.
