For the Shrimp:
- 1 lb large shrimp, cooked, deveined
- 6 grilling skewers
- 2 Tbsp coconut oil or butter
- 1/4 tsp cayenne powder
- 1/2 tsp crushed red pepper
- 1 lime
For the Pineapple Salsa:
- 2 Tbsp fresh cilantro (optional)
- 6 grape tomatoes, minced
- 3/4 cup pineapple, minced
Instructions
- Preheat the grill: Heat the grill to about 350 degrees Fahrenheit (or medium-high heat).
- Prepare the shrimp: Thaw the shrimp, skewer 4-5 shrimp on each skewer.
- Make the marinade: Mix coconut oil/butter with cayenne powder, coat the shrimp skewers.
