Description

This Slow Cooker Beef Stew is a hearty and comforting dish featuring tender beef cubes simmered with vegetables in a rich, flavorful gravy made with beer, tomato puree, and Worcestershire sauce.   • 3 tbsp Plain flour

Vegetables

  • 1 Onion
  • 3 Garlic cloves
  • 3 Carrots, peeled and chopped
  • 1/2 Swede (Rutabaga if in the USA), peeled and chopped

Liquids and Flavorings

  • 2 tbsp Sunflower oil
  • 600 ml Beer
  • 2 Beef stock cubes (no need to dissolve)
  • 3 tbsp Tomato puree
  • 3 tbsp Worcestershire sauce
  • Salt and freshly ground black pepper to taste


Instructions

  1. Coat the Beef: Thoroughly coat the beef cubes in plain flour until they are fully covered, which helps in browning and thickening the stew later.
  2. Brown the Beef: Heat sunflower oil in a pan or in the slow cooker pan if suitable for stovetop use. In small batches, brown the floured beef cubes until golden on all sides, avoiding overcrowding to ensure even browning.
  3. Add Remaining Ingredients: Add the chopped onion, garlic, carrots, swede, beer, beef stock cubes, tomato puree, Worcestershire sauce, salt, and pepper to the browned beef in the pan or slow cooker.
  4. Cook in Slow Cooker: Transfer everything to the slow cooker if you browned in a separate pan. Cover with the lid and cook on HIGH for 5-6 hours or on LOW for 8-9 hours until the beef is tender and the flavors have melded beautifully.
