- 2 Tbsp honey (plus more to drizzle!)
- 4 large cloves garlic, minced
- 2 tsp dried thyme
- Salt + pepper, to taste

- 1/2 a lemon, juiced
- 1 Tbsp fresh parsley, chopped
Instructions
- Preheat the Oven: Preheat the oven to 400°F (205°C).
- Prepare the Carrots: Peel and chop the carrots into 1.5 to 2-inch pieces. Place them in a baking dish.
- Season the Carrots: Drizzle olive oil, honey, minced garlic, dried thyme, salt, and pepper over the carrots. Toss to coat evenly.
- Roast the Carrots: Roast in the oven for 30-45 minutes, tossing halfway through, until desired tenderness.
- Finish and Serve: Squeeze lemon juice over the roasted carrots, sprinkle with parsley, drizzle with extra honey if desired, and season with salt and pepper. Serve hot.
