Description

These no-bake Pumpkin Pistachio Energy Balls combine the rich flavors of pumpkin pie spices with the natural sweetness of dates and the crunch of pistachios and cashews. Perfect for a healthy snack or a quick energy boost, they are easy to make and require no cooking.

  • ¼ cup raw cashews

  • ¼ cup canned or homemade pumpkin purée
  • ½ teaspoon vanilla extract

Spices and Seasoning

  • Pinch sea salt
  • ½ teaspoon pumpkin pie spice
  • ½ teaspoon cinnamon


Instructions

  1. Prepare pistachios: Place ¼ cup of pistachios in a food processor fitted with a metal blade and process until the nuts resemble coarse sand. Transfer these to a small bowl and set aside for later use.
  2. Grind remaining nuts: Add the raw cashews and the remaining ¼ cup of pistachios to the food processor, and process until finely ground to create a nutty base for the energy balls.
  3. Add remaining ingredients: Add the pitted dates, pumpkin purée, pumpkin pie spice, cinnamon, sea salt, and vanilla extract into the food processor with the ground nuts. Continue processing until all ingredients are combined into a smooth and sticky mixture. Taste and adjust spices if desired.
  4. Form the balls: Using a spoon or your hands, scoop and roll the mixture into 9 equal golf-ball-sized balls for perfectly portioned snacks.
  5. Coat with pistachios: Roll each energy ball in the reserved coarse pistachios to add texture and crunch.
  6. Store and serve: Serve immediately or store the energy balls in an airtight container in the refrigerator or freezer for up to 2 weeks.
