Description

Rack of Lamb:

  • 4 racks of lamb, trimmed
  • 2 teaspoons herbes de Provence
  • Salt and ground black pepper, to taste
  • 2 tablespoons vegetable oil

Pistachio Crust:

  • 1 1/4 cups chopped unsalted pistachio nuts
  • 3 tablespoons panko bread crumbs
  • 2 tablespoons melted butter
  • 2 teaspoons olive oil
  • Salt and ground black pepper, to taste
  • 6 tablespoons Dijon mustard

Instructions

  1. Preheat the oven: Preheat the oven to 400 degrees F (200 degrees C) and line a baking sheet with aluminum foil.
  2. Season the lamb: Generously season each rack of lamb with herbes de Provence, salt, and black pepper.
  3. Sear the lamb: Heat oil in a large skillet over high heat. Brown the lamb on all sides for 6 to 8 minutes. Transfer the lamb to a foil-lined baking sheet.
  4. Prepare the pistachio crust: In a bowl, mix pistachios, bread crumbs, butter, olive oil, salt, and black pepper. Spread mustard on the fat side of each rack of lamb and pat the pistachio mixture on top.
  5. Bake: Bake in the preheated oven until the crust is golden and the lamb is pink in the center, approximately 20 to 25 minutes.
  6. Rest and serve: Transfer the lamb to a plate and let it rest for 10 minutes before slicing. Serve and enjoy!

Notes

  • One ‘rack’ can serve two people. Slice into individual ‘chops’ for easy serving.
