Description

This Pineapple Salsa recipe is a vibrant and refreshing twist on traditional salsa, perfect for summer gatherings and BBQs. Grilled pineapple and onions give this salsa a delicious smoky flavor, balanced with the sweetness of pineapple and the zing of lime.

Ingredients

Units Scale

For the grill:

  • 1 pineapple, peeled and sliced
  • 1/2 red onion, sliced

Additional ingredients:

  • 1/2 cup chopped red bell pepper
  • 1/4 cup chopped cilantro
  • 1-2 limes, juiced
  • Salt, to taste
  • Ground black pepper, to taste
  • Jalapeno, finely diced, optional

Instructions

  1. Prep the grill: Heat the grill to medium-heat. Grill the pineapple and onions for 1-2 minutes per side until light grill marks appear. Remove and let cool.
  2. Prepare the salsa: Chop the grilled pineapple and onion into 1/4-inch pieces. In a bowl, combine them with bell pepper, cilantro, lime juice, salt, pepper, and jalapeno if desired.
  3. Chill and serve: Refrigerate the salsa until ready to serve.

Notes

  • For added creaminess, consider adding 1 chopped avocado.
  • Best served fresh on the day it’s made; leftovers can be stored for up to 3 days, but may lose some texture.
