Ingredients
Scale
Meat and Cheese
- 1 pound lean beef, 90/10 blend
- 12 slices provolone cheese, divided
- 6 brioche buns, store-bought or homemade
Vegetables and Aromatics
- 1 small white onion, chopped
- 1 green bell pepper, seeded and chopped
Seasonings and Liquids
- 2 tablespoons unsalted butter
- 1/2 cup beef stock
- 1/4 cup ketchup
- 2 tablespoons Worcestershire sauce
- 1/2 teaspoon garlic powder
- 1/2 teaspoon kosher salt
- 1/2 teaspoon black pepper
Instructions
- Sauté Vegetables: In a large skillet set over medium heat, melt the butter. Add the chopped onions and green bell peppers. Cook, stirring frequently, for 6 to 7 minutes until the vegetables are softened but not browned.
- Cook Ground Beef: Add the ground beef to the skillet. Use a wooden spoon to break it into small pieces while cooking. Brown the meat thoroughly for about 5 to 6 minutes.
- Add Seasonings and Simmer: Stir in beef stock, ketchup, Worcestershire sauce, garlic powder, kosher salt, and black pepper. Reduce heat to low and let the mixture simmer for 4 to 5 minutes until it thickens into a rich, saucy consistency.
- Prepare Cheese: Stack 6 slices of provolone cheese and cut them into approximately 1/2-inch pieces using a chef’s knife on a cutting board.
- Incorporate Cheese: Just before serving, stir the cut provolone cheese pieces into the hot sloppy joe mixture, allowing them to melt into the savory sauce.
- Toast Buns and Assemble: Toast the brioche buns in a toaster or toaster oven. Place the remaining 6 provolone slices on each toasted bun half. Spoon generous portions of the cheesy sloppy joe mixture onto the cheese-covered bottom buns, then top with the other bun halves. Serve warm.
- Storage Tips: Store leftover sloppy joe mixture in the refrigerator for 4 to 5 days or freeze it up to 3 months. Reheat gently in the microwave or a skillet with a splash of water or stock. Thaw frozen portions in the microwave if needed.
