Instructions
- Heat the oil: Heat the oil in a skillet over medium-high heat. Add the onions and sauté for about two minutes until softened.
- Cook the sausage: Add the garlic and sausage to the skillet, cook until the sausage is mostly browned, about 5 minutes, breaking it into crumbles.
- Add broth and tortellini: Stir in the broth and add the tortellini. Nestle the tortellini into the sausage and broth, simmer gently, then cover and cook for 4 minutes.
- Add spinach and cheese: Stir in the spinach, cheese, and lemon zest. Cook for an additional 1-2 minutes until the spinach wilts.
- Finish and serve: Remove from heat, add lemon juice, black pepper, and extra cheese if desired. Serve hot.
