- 1 tablespoon finely chopped fresh thyme
- 1 tablespoon finely chopped fresh oregano
- 1/4 teaspoon kosher salt, plus 1 pinch kosher salt, divided
- 1 tablespoon olive oil, plus more for drizzling
- 1 tablespoon fresh lemon juice
- 1 to 2 ounces goat cheese, crumbled
- 3/4 cup shredded mozzarella cheese
- 1 to 2 tablespoons finely chopped chives
- Semolina flour or cornmeal, for dusting the pizza peel
Instructions
- Prepare the Dough: Follow the Best Pizza Dough recipe, which requires about 15 minutes to make and 45 minutes to rest, to ready your pizza base.
- Preheat the Oven: Place a pizza stone in the oven and preheat to 500°F, or alternatively preheat a pizza oven if available.
- Cook the Mushrooms: Clean and slice the mushrooms. Heat 1 tablespoon olive oil in a sauté pan over medium-high heat. Add mushrooms, chopped thyme and oregano, and 1/4 teaspoon kosher salt. Cook for approximately 5 minutes, stirring occasionally until mushrooms are tender. Lower heat, add lemon juice, then remove from heat.
- Prepare the Pizza Base: Dust a pizza peel with semolina flour or cornmeal. Stretch your rested dough into a circle using your preferred technique, then transfer it gently onto the peel.
- Add Toppings: Brush a thin layer of olive oil over the dough crust. Evenly layer shredded mozzarella cheese, followed by cooked mushroom mixture and crumbled goat cheese. Sprinkle chopped chives and additional thyme sprigs on top. Finish with a pinch of kosher salt.
- Bake the Pizza: Using the pizza peel, carefully slide the pizza onto the preheated pizza stone. Bake for 5 to 7 minutes until the crust and cheese attain a golden-brown finish. If using a pizza oven, bake for about 1 minute.
