Simple Syrup:
- 2 cups sugar
- 1 cup water
Mint Tea:
- 6 cups water
- 4 family-sized iced tea bags
- 2 cups fresh mint leaves
Peach Nectar:
- 2 1/2 pounds fresh ripe peaches
- 1/4 cup lemon juice
- 3 cans (12-ounces each) ginger ale, chilled
- 2 liters club soda, chilled
Instructions
- Prepare the Simple Syrup: Combine sugar and 1 cup water in a saucepan. Boil, then simmer until sugar dissolves. Set aside to cool.
- Prepare the Mint Tea: Boil 6 cups water, add tea bags and mint. Steep, cool, and strain into a jug.
- Prepare the Peach Nectar: Boil water, blanch peaches, peel, slice, blend with lemon juice. Strain into the jug with mint tea. Add 1 cup simple syrup.
- Cover and chill for 4-12 hours. Before serving, stir in ginger ale and 1 liter club soda. Adjust sweetness as desired.
Notes
- Use ripe, sweet peaches for best results.
- You can prepare the punch in advance but add ginger ale and club soda just before serving.
- Leftover club soda can be used to refresh the punch the next day.
- If peaches are out of season, you can use store-bought peach nectar instead of fresh peaches.
