For the Mini Pancake Cereal
- 1/2 cup whole milk
- 1 large egg
- 1 1/2 teaspoons canola oil, plus more for pan
- 4 Tablespoons unsalted butter, melted
- 1/2 cup all-purpose flour
- 2 teaspoons granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon kosher salt
Instructions
- Prep your oven and pans. Position a rack in the center of the oven and preheat to 250°F. Set a wire rack on a sheet pan in the oven.
- Make the pancake batter. Whisk milk, egg, oil, and butter. Add dry ingredients and mix until just combined.
- Prep your skillet. Heat a nonstick skillet over medium-high heat and brush with oil.
