For the Shrimp:

  • 2 tablespoons olive oil
  • 1 small onion, sliced
  • 12 jalapeno peppers, sliced (use serranos for spicier)
  • 6 cloves garlic, minced
  • 3 tablespoons butter, or more as desired
  • 1 pound shrimp, peeled and deveined (tails on)
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • 2 tablespoons dry white wine
  • Juice from 1 small lime + 1 teaspoon lime zest

For Serving:

  • 2 tablespoons chopped fresh parsley or cilantro
  • Red pepper flakes

Instructions

  1. Heat the oil in a large pan over medium heat. Add the onion and peppers. Cook for 5 minutes to soften.
  2. Add the garlic and cook for 1 minute, stirring until fragrant.
  3. Add the butter and melt.
  4. Season the shrimp with paprika, cumin, salt, and pepper. Add to the pan with white wine and cook for 6-7 minutes until pink and cooked through.
  5. Stir in lime juice and zest.
  6. Garnish with parsley or cilantro and red pepper flakes. Serve!
