For the Shrimp:
- 2 tablespoons olive oil
- 1 small onion, sliced
- 1–2 jalapeno peppers, sliced (use serranos for spicier)
- 6 cloves garlic, minced
- 3 tablespoons butter, or more as desired
- 1 pound shrimp, peeled and deveined (tails on)
- 1 teaspoon paprika
- 1/2 teaspoon cumin
- Salt and pepper to taste
- 2 tablespoons dry white wine
- Juice from 1 small lime + 1 teaspoon lime zest
For Serving:
- 2 tablespoons chopped fresh parsley or cilantro
- Red pepper flakes
Instructions
- Heat the oil in a large pan over medium heat. Add the onion and peppers. Cook for 5 minutes to soften.
- Add the garlic and cook for 1 minute, stirring until fragrant.
- Add the butter and melt.
- Season the shrimp with paprika, cumin, salt, and pepper. Add to the pan with white wine and cook for 6-7 minutes until pink and cooked through.
- Stir in lime juice and zest.
- Garnish with parsley or cilantro and red pepper flakes. Serve!
