Cool off this summer with these refreshing Mango Popsicles. Made with frozen mango cubes, coconut yogurt, lime juice, and a touch of sweetness, these tropical treats are easy to make and perfect for a hot day.

Frozen Mango Popsicles:
- 1 1/2 cups frozen mango cubes
- 1/2 cup coconut yogurt
- 2 tablespoon agave (or sweetener of choice)
- 2 tablespoon lime juice
- 3/4 cup water
Optional:
- 1/4 teaspoon turmeric
- 1/4 teaspoon ground cardamom
Instructions
- Blend Ingredients: Blend all of the ingredients in a high-speed blender until smooth. The consistency will be a thick liquid, slightly thinner than a smoothie.
- Fill Popsicle Molds: Carefully pour or spoon the liquid into the popsicle molds. Place the tops on.
- Freeze: Place the popsicle molds in the freezer. Freeze for at least 8 hours or overnight.
- Serve: When the popsicles are fully frozen, they are ready to serve and enjoy. To serve, some popsicle forms may require a short thawing time. Alternatively, run the mold over warm water until the popsicle separates from the mold.
Notes
- If using open-top popsicle molds, freeze for 1 to 2 hours before adding sticks.
- Freezing time varies; for best results, freeze overnight.
- For a WFPB version, use maple syrup as the sweetener.
