Description

Cool off this summer with these refreshing Mango Popsicles. Made with frozen mango cubes, coconut yogurt, lime juice, and a touch of sweetness, these tropical treats are easy to make and perfect for a hot day.


Ingredients

Frozen Mango Popsicles:

  • 1 1/2 cups frozen mango cubes
  • 1/2 cup coconut yogurt
  • 2 tablespoon agave (or sweetener of choice)
  • 2 tablespoon lime juice
  • 3/4 cup water

Optional:

  • 1/4 teaspoon turmeric
  • 1/4 teaspoon ground cardamom

Instructions

  1. Blend Ingredients: Blend all of the ingredients in a high-speed blender until smooth. The consistency will be a thick liquid, slightly thinner than a smoothie.
  2. Fill Popsicle Molds: Carefully pour or spoon the liquid into the popsicle molds. Place the tops on.
  3. Freeze: Place the popsicle molds in the freezer. Freeze for at least 8 hours or overnight.
  4. Serve: When the popsicles are fully frozen, they are ready to serve and enjoy. To serve, some popsicle forms may require a short thawing time. Alternatively, run the mold over warm water until the popsicle separates from the mold.

Notes

  • If using open-top popsicle molds, freeze for 1 to 2 hours before adding sticks.
  • Freezing time varies; for best results, freeze overnight.
  • For a WFPB version, use maple syrup as the sweetener.
