Description

Haluski is a comforting Eastern European dish featuring sautéed cabbage, tender egg noodles, and flavorful kielbasa, all cooked together in rich butter. This savory and satisfying recipe comes together quickly, making it a perfect hearty side or main dish enjoyed by the whole family.

Ingredients

Scale

Haluski Ingredients

  • 8 oz. uncooked no-yolk egg noodles (½-inch wide preferred, any size works)
  • 6 tbsp salted butter (divided)
  • 6 oz. kielbasa, cut into small 1″ pieces
  • 1 large onion, chopped (about 2 cups)
  • 2 cloves garlic, minced
  • 1 head green cabbage (about 2 lbs.), core removed and cut into 1½” bite-sized pieces
  • 1 tsp mustard (spicy brown or Dijon), optional
  • ½ tsp kosher salt
  • ½ tsp freshly ground black pepper

Instructions

  1. Cook the Noodles: Bring a large pot of salted water to a boil. Add the egg noodles and cook al dente according to package instructions. Drain the noodles well and set them aside to keep warm.
  2. Sauté the Kielbasa: In a deep nonstick skillet, heat 2 tablespoons of butter over medium-high heat until bubbly. Add the kielbasa pieces and sauté for about 3 minutes until browned and crisp. Remove kielbasa with a slotted spoon and transfer to a plate; set aside.
  3. Cook the Vegetables: Using the same skillet with the kielbasa fat, add the chopped onion, minced garlic, cabbage, and 2 more tablespoons of butter. Reduce heat to medium and sauté, stirring frequently, until the cabbage is tender but not mushy—about 8 minutes depending on desired tenderness.
  4. Combine and Season: Add the drained egg noodles and cooked kielbasa back into the skillet with the cabbage mixture. Toss everything together to combine and heat through. Stir in the remaining 2 tablespoons of butter and the optional mustard. Season with kosher salt and freshly ground black pepper to taste.
  5. Serve: Serve the haluski hot immediately and enjoy this rich, buttery, and flavorful dish.

Notes

  • This Haluski recipe features fried cabbage and noodles with lots of butter, plus kielbasa, delivering a savory, hearty meal.
  • Preparation and cooking take under 30 minutes, making it ideal for a quick weeknight dinner.
  • Use spicy brown or Dijon mustard for added tang and depth, though it’s optional.
  • The recipe can be adjusted with different types of sausage or even made vegetarian by omitting the kielbasa.
  • For extra richness, feel free to add a sprinkle of grated cheese just before serving.
