Instructions
- Cook the Noodles: Bring a large pot of salted water to a boil. Add the egg noodles and cook al dente according to package instructions. Drain the noodles well and set them aside to keep warm.
- Sauté the Kielbasa: In a deep nonstick skillet, heat 2 tablespoons of butter over medium-high heat until bubbly. Add the kielbasa pieces and sauté for about 3 minutes until browned and crisp. Remove kielbasa with a slotted spoon and transfer to a plate; set aside.
- Cook the Vegetables: Using the same skillet with the kielbasa fat, add the chopped onion, minced garlic, cabbage, and 2 more tablespoons of butter. Reduce heat to medium and sauté, stirring frequently, until the cabbage is tender but not mushy—about 8 minutes depending on desired tenderness.
- Combine and Season: Add the drained egg noodles and cooked kielbasa back into the skillet with the cabbage mixture. Toss everything together to combine and heat through. Stir in the remaining 2 tablespoons of butter and the optional mustard. Season with kosher salt and freshly ground black pepper to taste.
