Potatoes
- 2 Idaho potatoes, sliced then halved

Instructions
- Prepare the ingredients: Wash and slice the bell peppers into strips. Slice the onions into rings or half-moons. Mince the garlic finely. Slice the Idaho potatoes and then halve the slices for even cooking.
- Cook the potatoes: Heat the vegetable oil in a large skillet over medium heat. Add the sliced and halved potatoes in a single layer. Fry them until golden and tender, about 15-20 minutes, turning occasionally for even browning. Remove potatoes and set aside.
- Brown the sausage: In the same skillet, add 2 tablespoons olive oil and heat over medium-high heat. Add the Italian sausages whole and cook until browned on all sides, about 8-10 minutes. Remove the sausages and set aside.
- Sauté the vegetables: Add the sliced onions and bell peppers to the skillet. Sauté over medium heat until they start to soften, about 8-10 minutes. Stir in the minced garlic, oregano, dry basil, crushed red peppers, salt, and pepper, cooking for an additional 2 minutes for the flavors to meld.
- Simmer sausages with peppers and onions: Slice the browned sausages into bite-sized pieces or leave whole as preferred. Return the sausages and fried potatoes to the skillet with the peppers and onions. Stir gently to combine all ingredients.
- Cook together to develop flavors: Reduce heat to low, cover the skillet, and let everything simmer together for about 15-20 minutes, stirring occasionally to prevent sticking and help flavors blend.
