For the Chicken:
- 1 tablespoon olive oil
- 1 1/2 pounds boneless, skinless chicken breasts, cubed
- 1 teaspoon sea salt
- 1 teaspoon garlic powder
- 1/2 teaspoon ground black pepper
For the Pasta:
- 1 16–ounce box penne pasta, uncooked
For the Sauce:
- 8 tablespoons butter, divided
- 4 cups water
- 1 cup heavy cream
- 1/4 teaspoon nutmeg
- 1 cup shredded Parmesan cheese
Instructions
- Prepare the Chicken: Press SAUTE button on Instant Pot, add olive oil and chicken. Cook until no longer pink. Season with salt, garlic powder, and pepper.
- Cook Pasta: Add penne pasta, water, and 4 tablespoons of butter to the pot. Pressure cook for 4 minutes.
- Make the Sauce: Stir in remaining butter, heavy cream, nutmeg, and Parmesan. Sauce will thicken as it cools. Serve with additional Parmesan and parsley.
Notes
- This recipe was tested in a 6-quart Instant Pot, but can also be made in an 8-quart model using the same ingredients.
