- Make Cream Mixture: In a large mixing bowl, combine whipping cream, icing sugar, vanilla extract, and almond extract. Beat with a whisk or electric mixer until soft peaks form (5-10 minutes by hand, 3-5 minutes with electric beaters). Add mascarpone cream and whisk again until the mixture is thick and well combined.
- Assemble the Layers: Quickly dunk each hot cross bun slice into the coffee mixture, soaking without letting them fall apart. Arrange a layer of soaked buns at the bottom of an 8×8 inch baking dish.
