  • 2 tbsp Dijon mustard
  • 1 tbsp wholegrain mustard (or use more Dijon)
  • 1/4 cup honey
  • 1 garlic clove, minced
  • 1 tsp cornflour/cornstarch
  • Pinch of salt and pepper
  • Fresh thyme leaves or chopped parsley

Instructions

  1. Preheat Oven and Prepare Potatoes: Preheat your oven to 220°C (425°F). Boil the potatoes until tender, then gently smash them to flatten. Drizzle with olive oil or melted butter, season with salt and pepper, and spread them out on a baking tray.

  5. Bake the Chicken and Potatoes: Bake in the preheated oven for about 45-50 minutes, or until the chicken is cooked through and the skin is golden and sticky. Halfway through cooking, baste the chicken with the reserved sauce to enhance flavor and moisture.
  6. Prepare Steamed Broccolini: While the chicken bakes, steam the broccolini until tender but still crisp, about 5-7 minutes.
