Description

Honey Lime Pan Roasted Chicken is a delicious and easy-to-make dish featuring juicy bone-in, skin-on chicken thighs cooked to golden perfection in a skillet. The chicken is glazed with a vibrant honey-lime-soy sauce mixture that balances sweetness and tanginess, garnished with fresh green onions and lime slices for added brightness. This recipe is perfect for weeknight dinners, meal prep, or creative dishes like tacos and enchiladas, ready in under 35 minutes.

Ingredients

Scale

Marinade

  • 2 Limes (zested and juiced)
  • 3 tbsp Honey
  • 1 tbsp Soy Sauce

Chicken

  • 8 Chicken Thighs (Bone-in and Skin-on; may substitute with 4 Leg Quarters)
  • 1 tsp Coarse Salt
  • 1/2 tsp Pepper
  • 3 tbsp Olive Oil

Garnish

  • 2 Green Onions (chopped)
  • Lime slices (optional garnish)

Instructions

  1. Prepare the Honey-Lime Sauce: Zest 2 limes and place the zest in a small bowl. Slice the limes in half and squeeze out the juice into the same bowl. Add 3 tablespoons of honey and 1 tablespoon of soy sauce, then stir well to combine.
  2. Season the Chicken: Pat the chicken thighs dry with paper towels and trim any excess skin. Sprinkle 1 teaspoon of coarse salt and 1/2 teaspoon of pepper evenly over both sides of the chicken.
  3. Brown the Chicken Skin: Heat 3 tablespoons of olive oil in a 10-12 inch heavy skillet over medium-high heat for 1 to 2 minutes. Place the chicken thighs skin side down in the skillet and cook for about 5 minutes, or until the skin is a dark golden brown. Make sure the chicken pieces are not sticking to the pan while browning.
  4. Prepare Garnishes: While the chicken is browning, chop 2 green onions and slice additional lime for garnish if desired.
  5. Cook Chicken with Sauce: Flip the chicken thighs so the cooked skin side is facing up. Pour the honey-lime mixture evenly over the chicken pieces. Reduce the heat to low, cover the skillet, and cook for an additional 14 to 18 minutes until the chicken is fully cooked and reaches an internal temperature of 180°F.
  6. Serve: Transfer the chicken to serving plates, drizzle with the pan juices, and garnish with chopped green onions and lime slices. Serve hot with your favorite sides and enjoy!

Notes

  • This recipe works best with bone-in, skin-on chicken thighs but can be made with boneless skinless thighs or chicken breasts as alternatives.
  • Use a heavy skillet like cast iron for best browning results.
  • This dish pairs well with rice, roasted vegetables, or a fresh salad.
  • Leftovers make great honey lime chicken tacos, enchiladas, or can be layered into a chicken and avocado rice stack for meal prep.
  • The recipe is quick and perfect for busy weeknight dinners, ready in under 35 minutes.
