  • 1/3 cup all-purpose flour
  • 4 oz shredded 2% milk Mozzarella cheese (about 1 cup)

Instructions

  1. Prepare the Chicken: Place the chicken breasts into the bowl of your food processor and pulse a few times or turn on for a few seconds until the chicken is finely diced. Alternatively, finely dice the chicken breasts by hand if you do not have a food processor.
  2. Mix the Ingredients: Transfer the diced chicken to a large mixing bowl. Add eggs, mayonnaise, herbs, salt, garlic powder, pepper, dill, flour, and shredded mozzarella. Stir well until everything is thoroughly combined.
  3. Shape the Fritters: Use a ¼ cup measuring cup to scoop out chicken mixture and form into 15 equal piles. Flatten each pile slightly into a patty with the back of a spoon or spatula.
  4. Cook the Fritters: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add half of the patties, cook for 3-4 minutes until bottoms are golden brown, then flip and cook for another 3-4 minutes until cooked through. Transfer to a plate. Repeat with the remaining oil and patties.
