Ingredients
Scale
Proteins
- 1 pound 93% lean ground turkey
Vegetables & Legumes
- 14 ounces sweet potato, peeled and diced 1/2 inch (about 2 medium)
- 1/4 cup chopped onion
- 3/4 cups canned black beans, rinsed and drained
- 3/4 cups corn kernels, fresh or frozen
- 1 large diced tomato
- 1 jalapeño, diced
- 1 clove garlic, minced
Flavorings & Herbs
- 2 tablespoons tomato paste
- 2 tablespoons chopped cilantro, plus more for garnish
- 1 1/2 teaspoons cumin, divided
- 1 1/4 teaspoons kosher salt, divided
Liquids & Toppings
- 1/2 cup chicken broth
- 4 ounces avocado, sliced
- Lime wedges, for serving
Instructions
- Brown the Turkey: Spray a large skillet over high heat with oil and add the ground turkey. Season with 1 teaspoon of salt and 1 teaspoon of cumin. Cook the meat, breaking it up with a spoon, until it is fully cooked and browned, about 5 minutes.
- Sauté Onion and Tomato Paste: Push the cooked turkey to one side of the skillet. Spray the empty side with oil, add the chopped onion and tomato paste, and cook together for 1 minute, allowing the onion to soften and tomato paste to toast slightly.
- Combine Ingredients: Add the diced sweet potato, rinsed black beans, corn kernels, diced tomato, diced jalapeño, minced garlic, chopped cilantro, and chicken broth into the skillet. Stir all ingredients to mix evenly.
- Season and Simmer: Sprinkle the remaining 1/4 teaspoon salt (or to taste) and the remaining 1/2 teaspoon cumin over the mixture and stir well. Cover the skillet and reduce heat to low. Cook for 12 to 14 minutes, or until the sweet potatoes are tender when pierced with a fork.
- Serve: Remove from heat and serve the skillet mixture topped with sliced avocado, lime wedges on the side, and additional cilantro garnish as desired.
