– 2 pounds ground chicken
– 1 teaspoon salt

– 1/4 cup fresh mint, chopped

Instructions

  1. Mix Ingredients: In a small mixing bowl, add the ground chicken, salt, black pepper, cumin, oregano, red pepper flakes, chopped dill and mint, diced red onion, minced garlic, and lemon zest. Use your hands to thoroughly mix until all ingredients are well combined.
  2. Form Meatballs: Using a cookie dough scoop or tablespoon, portion out the mixture and shape into uniform meatballs with your hands, about 1.5 inches in diameter.
  3. Heat Skillet: Place a large skillet over medium heat and add 1 tablespoon of olive oil. Allow the oil to become hot, shimmering.
  4. Cook Meatballs: Carefully add the meatballs to the hot skillet in batches if necessary. Cook for approximately 3-4 minutes per side, turning until browned on all sides. Use a meat thermometer to ensure the internal temperature reaches 165°F (74°C) before removing from heat.
  5. Serve: Arrange the cooked meatballs over chopped romaine lettuce, and garnish with crumbled feta, sliced cucumber, chopped tomato, rice, and a dollop of tzatziki sauce for a complete Mediterranean-inspired meal.
