Mussels and Sauce

  • 50g / 3 tbsp unsalted butter
  • 1/2 onion, finely chopped (brown, yellow, or white)
  • 3 garlic cloves, very finely chopped
  • 1 kg / 2 lbs mussels, bearded and scrubbed
  • 1 cup (250ml) dry white wine
  • 2 tomatoes, deseeded and diced
  • 1/4 cup flat leaf parsley, roughly chopped

Instructions

  1. Heat butter and aromatics: Heat oil in a large, heavy pot over medium heat, then add and melt the butter. Add the finely chopped garlic and onion, stirring occasionally until the onion is soft and fragrant, about 3 minutes.
  2. Add wine and simmer: Turn the heat up to high and pour in the dry white wine. Bring it to a boil, then simmer for 2 minutes until the harsh alcoholic smell has evaporated.
  3. Add tomatoes and mussels: Stir in the diced tomatoes. Add the cleaned mussels and gently stir to coat them in the sauce.
  4. Steam mussels: Cover the pot and lower the heat to medium-high. Cook the mussels, shaking the pot once or twice during cooking to distribute heat evenly. Cook for about 6 to 8 minutes, or until the mussels have opened.
  5. Finish and season: Toss the cooked mussels through the chopped parsley. Season carefully with salt and pepper, tasting first because the mussels are naturally salty.
  6. Serve: Drizzle with extra virgin olive oil and serve immediately with lemon wedges and crusty bread to mop up the flavorful sauce.
