- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp paprika
- 3 tbsp oil
Sauce
- 1 small onion (peeled and chopped finely)
- 3 large cloves garlic (peeled and minced)
- 1/4 tsp salt
- 1/2 tsp black pepper
- 180 ml (3/4 cup) strong chicken stock (water plus 2 stock cubes)
- 180 ml (3/4 cup) double (heavy) cream
- 1 tbsp lemon juice (juice from approx. half a lemon)
- 50 g (1/2 cup) finely grated parmesan cheese
- Small bunch fresh parsley (finely chopped)
- Black pepper, to serve
- Grated parmesan, to serve
Instructions
- Prepare the Chicken: Slice the chicken breasts in half horizontally to create 4 thin chicken breast steaks. Mix together cornflour, salt, black pepper, garlic powder, and paprika, then sprinkle this mixture evenly over both sides of the chicken pieces to coat them thoroughly.
- Fry the Chicken: Heat the oil in a large frying pan over medium heat. Once hot, add the chicken breasts and fry for 6-7 minutes, turning occasionally, until they are golden brown and fully cooked through.
- Cook Onion: Push the cooked chicken to one side of the pan, piling the pieces if needed. Add the chopped onion to the free space in the pan, adding a splash more oil if the pan looks dry. Cook the onion for 2-3 minutes, stirring frequently until it just starts to soften.
- Add Garlic and Seasoning: Add the minced garlic, 1/4 tsp salt, and 1/2 tsp black pepper to the onions. Cook together for 1 minute, stirring often to blend the flavors.
- Make the Sauce: Stir in the chicken stock, double cream, lemon juice, and grated parmesan cheese. Arrange the chicken evenly back in the pan and bring the sauce to a boil. Reduce the heat to a gentle simmer and cook for 3 minutes until the sauce thickens slightly.
- Serve: Serve the garlic parmesan chicken hot, topped with chopped fresh parsley, extra black pepper, and grated parmesan. This dish pairs excellently with mashed potatoes, green beans, sautéed potatoes, pasta, or rice.
