Description

This Skillet Garlic Lemon Butter Chicken recipe offers tender, juicy chicken breasts coated in a crispy parmesan and flour crust, sautéed to perfection and served with vibrant green beans and a luscious garlic lemon butter sauce. It’s a quick and easy one-pan meal bursting with bright, savory flavors perfect for weeknight dinners.

Ingredients

Scale

Chicken Coating

  • ¼ cup all-purpose flour
  • 2 tablespoons grated parmesan
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon pepper

Chicken and Cooking

  • 1 ¼ pound boneless, skinless chicken breasts or thighs
  • 2 tablespoons olive oil

Garlic Lemon Butter Sauce

  • ¼ cup lemon juice
  • 1 lemon, sliced
  • 4 cloves garlic, minced
  • ¼ teaspoon red pepper flakes
  • ½ teaspoon Italian seasoning
  • 4 tablespoons cold butter, cubed

Vegetables

  • 12 ounces green beans, cut into 1-inch pieces
  • Salt and pepper, to taste
  • ¼ teaspoon garlic powder (remaining)

Instructions

  1. Prepare the Chicken: In a shallow dish, whisk together flour, parmesan, ¼ teaspoon garlic powder, salt, and pepper. Coat each chicken piece on both sides with the mixture, shaking off excess. Heat olive oil in a skillet over medium-high heat. Cook chicken for 4-6 minutes per side, depending on thickness, until golden and cooked through. Remove chicken to a plate and set aside.
  2. Make the Garlic Butter Sauce: In a small saucepan over medium heat, combine lemon juice, minced garlic, red pepper flakes, and Italian seasoning. Reduce the mixture until about 3 tablespoons remain. Add 1 tablespoon butter and remove from heat; swirl to melt the butter. Return briefly to heat as needed and continue adding remaining butter one tablespoon at a time, swirling after each addition until fully melted. Remove sauce from heat and set aside.
  3. Sauté Green Beans and Assemble: If needed, add a small drizzle of oil to the skillet used for chicken. Add lemon slices and move them around with tongs to deglaze the pan and pick up browned bits. Add green beans and sauté for 3-5 minutes until tender-crisp. Season with salt, pepper, and remaining ¼ teaspoon garlic powder. Serve green beans topped with chicken. Drizzle garlic lemon butter sauce over the whole skillet or individual servings as desired.

Notes

  • This recipe is perfect for a quick, flavorful weeknight dinner with minimal cleanup due to cooking everything in one skillet.
  • The parmesan and flour coating creates a deliciously crisp crust on the chicken.
  • You can use either chicken breasts or thighs depending on your preference.
  • Adjust the red pepper flakes for more or less heat according to taste.
  • Serve with crusty bread or over rice if you want to make the meal more substantial.
