Whole Chicken:

Butter Mixture:
- 1/4 cup unsalted butter, melted
- 4 tablespoons olive oil
- 1 lemon, zested and juiced

Herb Butter:
- 4 tablespoons butter, room temperature
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh rosemary, chopped
- 1 teaspoon fresh thyme, chopped
- 1 tablespoon paprika (optional)
- 6 cloves garlic, minced
Additional:
- 1 head garlic, roughly peeled and cut in half horizontally
- 6 sprigs fresh rosemary, tied together
- 3 sprigs fresh thyme
- 1 lemon, quartered
Instructions
- Preheat oven: Preheat oven to 425 degrees F.
- Prepare the chicken: Clean and pat dry the chicken. Mix olive oil, melted butter, and lemon juice, then pour over the chicken. Season with salt, pepper, and parsley.
- Prepare herb butter: Combine room temperature butter with herbs, lemon zest, and garlic. Rub mixture over and inside the chicken.
- Stuff the chicken: Fill the cavity with garlic, herbs, and lemon. Tie the legs together.
- Roast: Place chicken in a roasting pan and roast for 1 hour and 15-25 minutes, basting halfway through. Broil for a golden finish.
- Rest and serve: Let the chicken rest before serving. Drizzle with pan juices and serve with lemon wedges.
