Whole Chicken:

  • 45 pound whole chicken, room temperature, giblets and neck removed

Butter Mixture:

  • 1/4 cup unsalted butter, melted
  • 4 tablespoons olive oil
  • 1 lemon, zested and juiced
  • Salt and freshly ground pepper to taste

Herb Butter:

  • 4 tablespoons butter, room temperature
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh rosemary, chopped
  • 1 teaspoon fresh thyme, chopped
  • 1 tablespoon paprika (optional)
  • 6 cloves garlic, minced

Additional:

  • 1 head garlic, roughly peeled and cut in half horizontally
  • 6 sprigs fresh rosemary, tied together
  • 3 sprigs fresh thyme
  • 1 lemon, quartered

Instructions

  1. Preheat oven: Preheat oven to 425 degrees F.
  2. Prepare the chicken: Clean and pat dry the chicken. Mix olive oil, melted butter, and lemon juice, then pour over the chicken. Season with salt, pepper, and parsley.
  3. Prepare herb butter: Combine room temperature butter with herbs, lemon zest, and garlic. Rub mixture over and inside the chicken.
  4. Stuff the chicken: Fill the cavity with garlic, herbs, and lemon. Tie the legs together.
  5. Roast: Place chicken in a roasting pan and roast for 1 hour and 15-25 minutes, basting halfway through. Broil for a golden finish.
