Ingredients
Scale
Steak and Seasoning
- 2 Strip Steaks
- Montreal Steak Seasoning (season to taste)
Potatoes and Seasoning
- 24 oz baby potatoes
- Olive oil (for cooking and drizzling)
- Salt (to taste)
- Pepper (to taste)
- Garlic powder (to taste)
Garlic Butter and Toppings
- 2 tbsp butter
- 1 tbsp minced garlic
- Shredded cheddar cheese (to sprinkle on potatoes)
- 3 chopped green onions
Instructions
- Boil Potatoes: Bring a pot of water to a boil on the stove, then add the baby potatoes. Boil them just until they are fork tender, which usually takes about 10-15 minutes depending on their size. Drain and set aside.
- Prep and Smash Potatoes: Heat a griddle or large skillet over medium heat and add a generous amount of olive oil. Place the boiled potatoes on the griddle and use a spatula to gently smash each potato down to increase surface contact for crispiness. Drizzle a little more olive oil over the smashed potatoes, and season with salt, pepper, and garlic powder. Cook, flipping the potatoes occasionally, until all sides are golden and crispy, approximately 10-15 minutes.
- Cook Steak Bites: While potatoes are cooking, cut the strip steaks into bite-sized cubes. On the other side of the griddle, add the steak cubes and season them with Montreal steak seasoning. Cook the steak cubes to your preferred doneness, about 3-4 minutes per side for medium rare.
- Add Garlic Butter: Once the steak is cooked, turn off the heat and add the butter and minced garlic to the steak side of the griddle. Stir together to coat the steak bites in the flavorful garlic butter sauce.
- Assemble and Serve: Sprinkle shredded cheddar cheese over the crispy smashed potatoes so it begins to melt. Top with chopped green onions. Plate the garlic butter steak bites alongside the loaded smashed potatoes and enjoy immediately.
Notes
- Two decent sized strip steaks are sufficient for four people, but adjust the quantity depending on your family size.
- For extra flavor, you can add fresh herbs like rosemary or thyme to the potatoes while smashing.
- If you don’t have a griddle, a large cast-iron skillet works well for this recipe.
- Use a high-smoke point oil like avocado or canola if preferred instead of olive oil for crispier potatoes.
- To make it dairy-free, omit the butter and cheese or use vegan alternatives.
