Chocolate Pudding Layer
- 1 (5.9-ounce) box instant chocolate pudding
- 2 1/2 cups whole milk
- 1/2 cup Cool Whip, defrosted
- 6 graham crackers, broken in half
Cream Cheese Marshmallow Layer
- 5 ounces cream cheese, at room temperature
- 7 ounces marshmallow creme
- Pinch of salt
- 2 cups Cool Whip, defrosted
Topping
- 6 graham crackers, broken in half
Instructions
- Prepare the baking dish: Line a 9×13-inch baking dish with parchment paper, leaving extra parchment over the edges to allow easy removal of the frozen dessert later.
- Make the pudding layer: In a medium bowl, whisk together the instant chocolate pudding mix, whole milk, and ½ cup Cool Whip until the mixture is smooth and creamy.
- Layer graham crackers and pudding: Arrange half of the graham crackers evenly on the bottom of the prepared baking dish. Spread the pudding mixture evenly over the graham crackers. Chill in the refrigerator while preparing the next layer.
- Prepare the marshmallow cream cheese layer: In another medium bowl, beat the cream cheese and marshmallow creme together until smooth and creamy. Gently fold in the remaining 2 cups of Cool Whip and a pinch of salt until fully incorporated.
- Assemble the s’mores: Spread the cream cheese mixture evenly over the chilled pudding layer. Top with the remaining graham crackers, distributing them evenly.
- Freeze: Cover the dish with foil and freeze for at least 6 hours or until the dessert is firm enough to slice through.
- Serve: Use the parchment paper overhang to lift the frozen dessert from the dish. On a cutting board, slice the dessert into 12 squares, using the graham crackers as a guide. Trim any excess filling for neat squares.
- Enjoy or store: Serve immediately, allowing the dessert to soften slightly for about 15 minutes at room temperature if desired. Store leftovers wrapped in plastic wrap or in a freezer-safe bag for up to 2 months.
Notes
- Easy Protein Frozen S’mores: For a protein-packed variation, melt ½ cup semi-sweet chocolate chips with 1 teaspoon coconut oil, spread over 5 graham crackers in a 9×9 inch pan, and freeze 5 minutes until set. Mix 1 scoop vanilla protein powder with Cool Whip or coconut whip and spread over chocolate. Top with more graham crackers and freeze overnight.
- Storage: Wrap each s’more sandwich individually with plastic wrap and store in an airtight freezer container for up to 2 months to maintain freshness and texture.
