Delicious French Onion Soup Bites made with caramelized onions, beef stock, and melted Gruyere cheese nestled in crispy phyllo cups, perfect as an elegant appetizer or party snack.

Onion Mixture
- 1 large onion, thinly sliced
- 2 cups beef stock
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ½ teaspoon crushed red pepper
- 1 tablespoon Worcestershire sauce
- Drizzle of olive oil
Cheese & Phyllo Cups
- 2 deli slices Gruyere or other sharp white cheese (or 1 ounce very thinly sliced cheese)
- 2 tablespoons grated Parmesan cheese
- 1 package frozen phyllo cups (about 15 cups)
- Fresh thyme leaves (optional)
Instructions
- Prepare Onion Mixture: In a small skillet, combine the thinly sliced onion, beef stock, onion powder, garlic powder, salt, crushed red pepper, Worcestershire sauce, and a drizzle of olive oil. Cook over medium heat, stirring occasionally until the onions are very soft and most of the liquid has evaporated, approximately 45 minutes. A nonstick skillet is preferred for best results.
- Prepare Cheese: Cut the deli cheese slices into 8 small pieces each, creating two small squares per phyllo cup.
- Preheat Oven and Assemble: Preheat your oven to 375°F (190°C). Place the frozen phyllo cups on a baking sheet. In each cup, add a small amount of grated Parmesan cheese, followed by about one teaspoon of the prepared onion mixture. Then, top with two small pieces of the melting Gruyere cheese.
- Bake: Bake the assembled phyllo cups in the preheated oven for 20 minutes until the cheese is bubbly and melted.
- Garnish and Serve: Remove from oven and top with fresh thyme leaves if desired. Serve hot. These bites can also be served at room temperature and are perfect for potluck events.
Notes
- Make this vegetarian by substituting beef stock with vegetable stock and using vegan Worcestershire sauce. The dish remains delicious.
- Make ahead by preparing the onion filling up to 4 days in advance and refrigerate. This saves time during assembly.
- For potluck events, bake right before leaving or assemble and bake at the host’s house.
