Meringue

  • 6 medium egg whites (or 5 large)
  • 300 g white caster sugar
  • 1 tsp white wine vinegar
  • 1 tsp cornflour

  • Fresh fruit (blackberries, pomegranate seeds, raspberries, blueberries, etc.)

Instructions

  1. Preheat and prepare baking tray. Preheat your oven to 150°C (130°C fan). Line a large baking tray with baking parchment to prevent sticking.
  2. Whisk egg whites and sugar. Using a stand mixer, whisk the egg whites on high speed until stiff peaks form. Gradually add caster sugar one teaspoon at a time, whisking well after each addition until the meringue is glossy and smooth.
  3. Add flavorings and stabilize. Whisk in the white wine vinegar, then the cornflour, and finally the vanilla extract, ensuring the mixture stays smooth and stiff.
  4. Shape the wreath. Place a small bowl in the center of the lined baking tray as a guide. Using a tablespoon, spoon large dollops of meringue mixture evenly around the bowl to form a circular wreath shape. Use a fork to spike and texture the meringue surface for a decorative effect.
  5. Remove the bowl and bake. Carefully lift the bowl out, leaving the ring-shaped meringue. Bake in the oven for 1 hour. After baking, turn off the oven and allow the meringue to cool completely inside with the door closed, ideally overnight.
  6. Prepare fruit and cream. Wash and chop fresh fruit as needed. Whip the double cream with icing sugar until soft peaks form.
  7. Assemble the wreath. Spread, dollop, or pipe the whipped cream over the cooled meringue wreath. Arrange fresh fruit and freeze dried raspberries on top. Drizzle with raspberry coulis and garnish with mint leaves. Optionally, sprinkle icing sugar and edible glitter for a festive finish.
