- Shape cookies: Using your hands, portion the dough into 28 small balls and place them evenly spaced on a baking sheet lined with parchment paper. Press your thumb into the center of each ball to create a well.
- Bake: Preheat the oven to 350°F (175°C). Bake the cookies for about 12 minutes or until the edges are lightly golden. Remove from the oven and let cool completely on a wire rack.
- Make the filling: In a small bowl, beat together ¼ cup softened butter, powdered sugar, and Captain Morgan Spiced Rum until smooth and creamy.
- Fill cookies: Spoon or pipe the icing into each thumbprint well on the cooled cookies. Dust the tops lightly with ground nutmeg for added flavor and festive appearance.
