Instructions

  1. Heat oil and cook onions: In a large dutch oven or sauce pot, heat 2 tablespoons of olive oil over medium-high heat until hot. Add the diced onion and cook for 2-3 minutes until they start to soften.
  2. Brown the ground beef: Add 1 pound of ground beef to the pot with onions. Cook for another 2-3 minutes until the meat starts to brown. Then add the minced garlic and stir well.
  3. Season the meat: Once the meat is cooked through, sprinkle in 3 tablespoons chili powder, 1 tablespoon cumin, 2 teaspoons garlic powder, 1.5 teaspoons salt, 1/2 teaspoon pepper, and a pinch of cayenne powder. Stir everything together to evenly coat the mixture with spices.
  4. Add canned ingredients and liquids: Pour in 1 can diced tomatoes, 1 can tomato sauce, 1 can pinto beans, 1 can kidney beans, 3 tablespoons tomato paste, 2 tablespoons honey, and 2 cups beef broth. Stir until all the ingredients are fully combined.
  5. Simmer the chili: Bring the mixture to a light boil, then reduce heat to medium-low and let it simmer uncovered for 30 minutes. Stir occasionally to prevent sticking and allow flavors to meld.
