Main Ingredients
- 3 (85g) bags ramen noodles (such as Mr Noodles), seasoning packets discarded
- 1 head broccoli, chopped
- 2 chicken breasts, cut into 1-inch pieces
Sauce and Seasoning
- 2 tbsp tamari or low sodium soy sauce
- 2 tbsp hoisin sauce
- 2 cloves garlic, minced
- 1 tbsp olive oil
- Salt and pepper, to taste
Garnish
- 4 green onions, sliced
- Sesame seeds
Instructions
- Cook Noodles and Broccoli: Bring a large pot of water to a boil on the stove. Add ramen noodle packs, discarding the seasoning packets. Cook for 2 minutes, adding the chopped broccoli during the last minute. Drain the noodles and broccoli, then set aside.
- Prepare Sauce: In a small bowl, mix tamari or soy sauce, hoisin sauce, and minced garlic until well combined. Set aside.
- Cook Chicken: Heat olive oil in a large skillet over medium-high heat. Add the chicken pieces, seasoning them with salt and pepper. Cook for 6 to 7 minutes, stirring occasionally, until the chicken is browned and cooked through.
- Combine Ingredients: Add the cooked ramen noodles, broccoli, and sauce mixture to the skillet with the chicken. Toss gently to combine all ingredients evenly. Cook for an additional 1 to 2 minutes to allow the sauce to thicken and coat the noodles and chicken.
- Garnish and Serve: Remove the skillet from heat. Garnish the stir fry with sliced green onions and sesame seeds. Serve immediately and enjoy your flavorful chicken ramen noodle stir fry!
Notes
- Swap out the chicken for shrimp, beef, or tofu for variety.
- Add extra vegetables such as bell peppers, bok choy, or mushrooms based on what you have available.
- Store leftovers in an airtight container in the refrigerator for up to 5 days. Reheat by sprinkling a little water on top and microwaving for 2 to 3 minutes.
