- Sear the Chicken: Heat olive oil and 1 tablespoon of butter in a skillet over medium-high heat. Once the pan is hot, add the chicken cutlets and sear for 4-5 minutes on each side until golden brown. Remove the chicken from the skillet and set aside; it will finish cooking in the sauce later.
- Cook the Mushrooms: Add the remaining 2 tablespoons of butter to the skillet along with the sliced cremini mushrooms. Sauté for 3-5 minutes, stirring occasionally, until the mushrooms turn a rich brown color.

- Finish the Sauce and Chicken: Pour the heavy cream into the skillet and return the chicken cutlets to the pan. Simmer together for another 4-5 minutes, or until the chicken is cooked through and the sauce thickens. Taste and season with additional salt and pepper if desired.
