Description

Deviled Potatoes offer a creamy, tangy, and vegan-friendly twist on the classic deviled eggs appetizer. Made with baby potatoes hollowed out and filled with a smooth avocado oil mayo-based filling mixed with mustard, pickle, and chives, these bite-sized treats are perfect for parties or snacks.

Filling

  • ½ cup Chosen Foods Avocado Oil Mayo (vegan mayo)
  • 1 tbsp mustard
  • 1 pickle (finely diced)
  • ¼ cup chives (chopped)
  • 1 tsp salt
  • 1 tsp black pepper
  • ½ tsp paprika


Instructions

  1. Boil Potatoes: In a stock pot, add the baby potatoes and cover them with water. Add a teaspoon of salt to the water. Bring it to a boil and cook the potatoes until they are fork tender, around 18 minutes. Drain the water and let the potatoes cool.
  2. Prepare Potato Skins: Once the potatoes are cool enough to handle, slice each potato lengthwise. Using a small spoon or melon baller, carefully scoop out the insides, leaving a thin layer of potato around the edges to form skins. Place the scooped potato flesh into a large bowl and set the skins aside.
  3. Make Filling: To the bowl with potato flesh, add the avocado oil mayo, mustard, finely diced pickle, chopped chives, salt, and black pepper. Use a fork to mash all ingredients together thoroughly until you achieve a smooth, creamy filling.
  4. Fill Potato Skins: You can spoon the filling directly back into the potato skins. Alternatively, for a cleaner presentation, blitz the filling in a food processor for 5 to 10 seconds until very smooth. Transfer the filling to a piping bag fitted with the largest piping tip and pipe the filling into each potato skin.
  5. Garnish and Store: Sprinkle each filled potato with paprika and additional chopped chives if desired. Refrigerate the deviled potatoes and store for up to 3 days before serving.
