For the Custard Filling

  • 1/2 cup (120 ml) Greek yogurt
  • 1 large egg
  • 2 teaspoons (10 ml) honey, or maple syrup
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg

Instructions

  1. Preheat the Oven: Set the oven rack to the middle position and preheat to 400ºF (204ºC) to ensure even baking.
  2. Prepare the Bread: Line a sheet pan with parchment paper. Place the bread slices on the pan and use the back of a spoon to press an indentation into the center of each slice to hold the custard filling.
  3. Make the Custard Filling: In a medium bowl, whisk together the Greek yogurt, egg, honey (or maple syrup), ground cinnamon, and ground nutmeg until you achieve a smooth custard mixture.
  4. Fill the Bread: Spoon about 2 tablespoons of the custard mixture into the center indentation of each bread slice. Adjust the amount based on the size of the bread slice to avoid overflow.
  5. Add Toppings: Distribute the raspberries, blackberries, blueberries, and sliced strawberries evenly on top of the custard in each bread slice. For additional sweetness, drizzle with extra honey if desired.
  6. Bake: Place the sheet pan in the oven and bake for 12 to 14 minutes, until the custard is set but still slightly wiggly on top. The internal temperature of the custard should reach between 170 to 175ºF (76 to 79ºC).
