Instructions
- Add the beef to the crockpot. Place the 1 1/2 pounds of thinly sliced beef strips into the base of your crockpot, ensuring they are spread out evenly for even cooking.
- Make and pour the sauce. In a medium bowl, whisk together the 1 cup low-sodium beef broth, 1/2 cup low-sodium soy sauce, 1/3 cup light brown sugar, 1 tablespoon sesame oil, and 1 tablespoon minced garlic until well combined. Pour this mixture over the beef in the crockpot, coating the meat thoroughly.
- Cook the beef. Cover and cook on the low setting for 3 to 4 hours, or until the beef is fully cooked and tender to your liking, allowing the flavors to meld.
- Prepare the thickening slurry and add broccoli. Remove about 1/4 cup of the cooking liquid from the crockpot (or substitute with 1/4 cup water) and whisk in 2 to 3 tablespoons of cornstarch until smooth. Stir this mixture back into the crockpot. Then add 3 to 4 cups of chopped broccoli on top of the beef.
