Instructions

  1. Prepare the Potatoes: Cut all potatoes into equal-sized pieces to ensure even cooking. Place them in a large pot and cover with cold water. Add about 1 teaspoon salt to the water and stir.
  2. Cook the Potatoes: Bring the water to a boil over high heat. Once boiling, reduce the heat to medium and simmer the potatoes for about 15 minutes or until fork tender.
  3. Drain and Mash: Drain the potatoes thoroughly. Use a potato ricer, sieve, or masher to mash the potatoes until very fluffy and smooth.
  4. Make the Dough: In a mixing bowl, combine the fluffy mashed potatoes with 1 cup all-purpose flour, 3 tablespoons butter, salt, and freshly ground black pepper. Mix thoroughly until a dough forms.
  5. Shape the Potato Cakes: On a lightly floured surface, flatten the dough into an 8-inch disk about 1 inch thick. Cut the disk into 8 triangular pieces, similar to slicing a pizza.
  6. Pan-fry: Melt the remaining 3 tablespoons of butter in a large skillet over medium heat. Add the potato cakes and cook each side for 4 to 5 minutes, or until golden brown and crispy.
