  • 4 chicken breasts (halves, boneless and skinless)
  • ¾ cup all-purpose flour
  • 2 large eggs (beaten)
  • ¼ cup vegetable oil (or olive oil for frying)
  • ¾ cup panko breadcrumbs
  • ¾ cup regular breadcrumbs
  • ½ cup parmesan cheese (grated)
  • ½ teaspoon salt (or to taste)
  • ½ teaspoon pepper (or to taste)

Instructions

  1. Preheat the oven: Set your oven to 425℉ to get it ready for baking the chicken topped with cheese and sauce.
  2. Pound the chicken: Place one chicken breast at a time between two pieces of parchment paper and pound using the flat side of a meat mallet until about ½ inch thick. Repeat for each breast to ensure even cooking.
