Instructions

  1. Boil the Sweet Potatoes: In a large pot, add the peeled and cubed sweet potatoes to salted water. Bring to a boil and cook until the potatoes are tender when pierced with a fork, about 15-20 minutes. Drain the potatoes in a colander to remove all water.
  2. Sauté the Garlic: While the potatoes boil, melt the butter in a small pan over medium heat. Add the crushed garlic cloves and sauté until lightly golden, releasing their flavor without burning.
  3. Mash and Combine: Return the drained potatoes to the pot. Add the sautéed garlic and melted butter, then pour in the milk and light sour cream. Mash the mixture using a potato masher or fork until smooth and creamy. Adjust seasoning with salt and freshly cracked pepper to taste.
